  • 2 small zucchini
  • 2 small yellow squash
  • 1/2 small onion
  • 1 tablespoons olive oil
  • 1 tablespoons real butter
  • 3/4 teaspoon salt
  • pepper to taste
  • 1/2 cup Parmesan cheese grated
  1. In a 10 or 12 inch skillet, heat the olive oil and butter over medium heat.
  2. Use a sharp knife to chop off the ends of the zucchini and squash. Chop them into thin slices.
  3. When the oil shimmers, add the squash and zucchini.
  4. Sauté for about 8-10 minutes. Season with salt, pepper and Parmesan cheese
  5. Take it off the heat when the squash is fork tender but hasn't started to get mushy.
