Avocado Sausage and Eggs
I love this Keto friendly breakfast. It is something very different you will enjoy.

- 1 medium Avocado
- 2 eggs
- 1 link jalapeño kielbasa sausage
- 1 tbsp shredded cheese
- 3 tbsp fresh pico
- salt and pepper to taste
Preheat oven to 425.
Cut the avocado in half and remove the pit.
With a spoon, scoop out some of the avocado so it is bigger than your egg and yolk. Place in a muffin pan to keep the avocado stable while cooking.
Crack your egg and add it to the inside of your avocado.
Cook for 14-16 minutes.
While egg is baking, slice sausage in to quarter size pieces and warm in a skillet.
Place cooked sausage on top of cooked egg, sprinkle with cheese, salt and pepper and top it with fresh pico.
