I love this Keto friendly breakfast. It is something very different you will enjoy.

  • 1 medium Avocado
  • 2 eggs
  • 1 link jalapeƱo kielbasa sausage
  • 1 tbsp shredded cheese
  • 3 tbsp fresh pico
  • salt and pepper to taste
  1. Preheat oven to 425.
  2. Cut the avocado in half and remove the pit.
  3. With a spoon, scoop out some of the avocado so it is bigger than your egg and yolk. Place in a muffin pan to keep the avocado stable while cooking.
  4. Crack your egg and add it to the inside of your avocado.
  5. Cook for 14-16 minutes.
  6. While egg is baking, slice sausage in to quarter size pieces and warm in a skillet.
  7. Place cooked sausage on top of cooked egg, sprinkle with cheese, salt and pepper and top it with fresh pico.
