Bacon Egg Salad
A classic egg salad with a twist.

- 8 whole eggs hardboiled and peeled
- ½ cups mayonnaise
- 2 tsp dill pickle juice
- 1 tbsp dijon mustard
- 1 tsp worcestershire sauce
- 2 tsp very finely chopped onion optional
- 1 tbsp dill weed
- 2 tbsp yellow mustard
- 8 slices of bacon cooked crispy and chopped
- salt and pepper to taste
Fry 8 slices of bacon, pat dry from grease, chop and set aside.
In a medium bowl, roughly chop 8 peeled hard-boiled eggs.
Add 1/2 cup mayonnaise, chopped onions (optional), dijon mustard, yellow mustard, pickle juice, worcestershire sauce, chopped bacon and dill weed. Season to taste with salt and pepper; stir gently to combine.
Refrigerate until serving time.
Serve with lettuce as a salad or bread to make a sandwich.
