This timeless classic cake has a new spin with key lime juice. You can take this cake anywhere and it will be a hit.
- 1 box French Vanilla Cake Mix I prefer Duncan Hines
- 1 box lemon pudding
- 3 eggs
- 1/3 cup vegetable oil
- 1 cup 7up or Sprite
- 2 tbsp key lime juice
- 4 cups powdered sugar
- 1/2 cup key lime juice more to thin frosting
- lime zest for garnish
Preheat oven to 350° F. Grease and flor 18" x 13" rimmed baking sheet (half sheet pan).
In a large mixing bowl add cake mix, eggs, oil, key lime juice, 7up or sprite and pudding mix. Using an electric mixer, beat one minute on low, scrapping down sided of bowl if needed. (do not over mix)
Pour cake batter into prepared sheet pan. Bake for 20-22 minutes, or until toothpick inserted in middle comes out clean. Remove from oven and cool in pan on a wire rack.
Cool cake for 15 minutes.
In a medium bowl, using a hand mixer add, powdered sugar and Key lime juice. Mix until smooth. Spread frosting on cake.
Top with extra lime zest for garnish.
