Bacon Salsa

This is a wonderful recipe to use as a topper on chicken, I also like to add hominy.

Bacon Salsa

  • 1 pack 2.52 ounce fully-cooked bacon
  • 1 can 11 ounce chipotle white corn drained
  • ½ cup white onion diced
  • 3 jalapeños seeded and diced
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1/2 tsp salt
  1. Microwave bacon for 25-35 seconds. Allow to cool, then chop into small pieces.

  2. In a large bowl, stir together bacon, corn, onion, diced jalapeños, vinegar, honey and salt. Serve immediately for best results with tortilla chips for dipping.
