This is a wonderful recipe to use as a topper on chicken, I also like to add hominy.
- 1 pack 2.52 ounce fully-cooked bacon
- 1 can 11 ounce chipotle white corn drained
- ½ cup white onion diced
- 3 jalapeños seeded and diced
- 2 tbsp apple cider vinegar
- 1 tbsp honey
- 1/2 tsp salt
Microwave bacon for 25-35 seconds. Allow to cool, then chop into small pieces.
In a large bowl, stir together bacon, corn, onion, diced jalapeños, vinegar, honey and salt. Serve immediately for best results with tortilla chips for dipping.
